So my plants are outdoors now, and they tend to wilt in the middle of the day. Am I just not watering them enough? Is it too hot?

This time of year, that is normal. What you do is watch them, if they recover later in the day, then they are fine. If they remain wilted, then they need more water. They will tell you, if you watch them.

Wilting in the hot afternoons is normal. More water probably won't make any difference. If they are perked back up in the mornings, they are doing fine. :)
